Watermelon cake: The Summer dessert you’ve been missing
Sweet mangoes, luscious berries, refreshing melons; we love Summer fruit! It’s one of our favourite things about the warmer months. Though we love nature’s candy as it is, sometimes it’s fun to spice things up. Enter Watermelon cake, the freshest dessert you wish you knew about sooner. Make it at home with our super quick and easy recipe below!
INGREDIENTS
One large watermelon
Topping
Coconut yoghurt
Raspberries
Blueberries
Strawberries
Cherries
Mint leaves (any kind of mint will do)
METHOD
- Place the watermelon on a clean surface. With a large, sharp knife, cut the watermelon so that you end up with circular slices. You can cut a number of slices depending on how large your watermelon is and use them for more cakes later on.
- Cut the watermelon slice into wedges or triangles, as you would a pizza.
- Place the wedges on a serving plate. Spoon coconut yoghurt over each one. Top with berries, cherries and mint leaves.
